To update a table of contents, click in the table of contents. Then go to References > Update Table. It depends on where you're looking:-) Those Styles are not 'missing', they simply are not displayed in the default listings. Many built-in Styles now include a Hide Until Used property. You can access them in several ways:.
In the Styles gallery of the Home tab of the Ribbon. Heading 1 & Heading 2 are there by default. Heading 3 will be added automatically once it is used in the document.
By selecting Recommended or All Styles in the List dropdown of the Styles Palette in the Toolbox. Any Style is always available by going to Format Style & selecting the Style you want to apply. This will then make the Style available in the Styles Palette if you choose In Current Document or Styles in Use from the List dropdown & will add it to the Styles gallery (if it is defined to be included).
